Chocolate Peanut Butter Pie — makes 10 servings
Ingredients:
- 8 crushed graham crackers
- ¼ cup of melted light stick butter
- 12 oz. of firm tofu
- ½ cup of natural peanut butter
- 2 tablespoons of maple syrup
- 14 oz. can of light coconut milk
- 1 teaspoon of vanilla extract
- 1 cup of semisweet chocolate chips
- 1 cup of unsweetened almond milk
Directions:
- Preheat oven to 375 degrees F and grease an 8” pie pan.
- Process graham crackers in a food processor until semi-fine. Add melted butter and pulse to combine.
- Press graham mixture into the pie pan and bake for 10 minutes. Let cool.
- In a food processor, blend tofu, peanut butter, and maple syrup.
- Whip coconut cream in a mixing bowl, then add vanilla extract.
- Fold in the peanut butter mixture and pour into the crust. Freeze for 45 minutes.
- Top with optional chocolate topping and freeze until firm.
- Optional Chocolate Topping: Heat chocolate chips and milk in a saucepan, then pour over the pie.
- Freeze for an additional 15-20 minutes.
