The combination of roasted chile paste, tender salmon, and caramelized vegetables will leave your taste buds satisfied and your body nourished. With ingredients like fresh ginger, garlic, and a touch of honey, this dish strikes the perfect balance between savory and sweet.

Chile-Roasted Salmon and Cauliflower — serves 4

Ingredients:
• 1 cauliflower head
• 6 carrots
• 1 pinch of fresh ginger
• 2 garlic cloves
• ½ cup of low-sodium soy sauce
• 2 tablespoons of roasted chile paste
• Dash of fish sauce (optional)
• Hot chile sauce, such as Sriracha, to taste (optional)
• 2 tablespoons of honey
• 3 tablespoons of olive oil
• 12-ounces salmon fillet, cut into 4 servings

Directions:

  1. Preheat the oven to 450 F and line two baking dishes with foil.
  2. Prepare the cauliflower and carrots, then place them in a large bowl.
  3. Whisk together the soy sauce, chile paste, fish sauce, chile sauce, honey, ginger, and garlic in a small bowl.
  4. Toss the vegetables with the olive oil-chile mixture and bake for 30 minutes.
  5. Bake the salmon with the reserved chile mixture for 8 minutes.
  6. Coat the salmon with the sauce, bake for an additional 2 minutes, and serve.
